Staff in crisp white uniforms greeted us warmly, whisking our luggage away while we were guided through the beautifully landscaped grounds. The property feels distinctly different from the postcard-perfect Santorini aesthetic—here, earthy tones, natural stone, and sleek, modern interiors take center stage.
The atmosphere is one of hushed elegance. An infinity pool, framed by black volcanic rock, reflects the sky and sea, creating a seamless transition between nature and design. Olive trees sway gently in the breeze, while low-lit pathways lead to private sanctuaries of relaxation. Unlike hotels stacked atop one another in Oia’s main village, Epitome offers breathing space, both physically and emotionally.

We stayed in the Aqua Retreat Two-Bedroom Pool Villa, an astonishingly spacious retreat that felt like our own private island within an island. The villa featured two beautifully designed bedrooms, a luxurious rain shower, and a glass wall with a mesmerizing underwater pool view from the lower level’s bedroom. The outdoor space was nothing short of extraordinary: a large private pool, an outdoor shower, and a spacious terrace perfectly positioned for unobstructed sunset views.
Throughout the property, suites are designed with a refined yet earthy aesthetic. Soft greys, warm woods, and natural stone set the tone, while floor-to-ceiling windows ensure that the breathtaking Santorini seascape remains the focal point. Plush king-size beds, indulgent Acqua di Parma toiletries, and thoughtful details like a Nespresso machine and a complimentary bottle of Assyrtiko wine elevate the experience further.

Dining at Canaves Oia Epitome is nothing short of exceptional. The hotel is home to Elements Restaurant, helmed by Executive Chef Tasos Stefatos, whose experience in Michelin-starred kitchens is evident in every dish.
The seasonal tasting menu is a highlight—each course showcasing the finest local ingredients, from melt-in-your-mouth Santorini tomatoes to freshly caught seafood. The standout? The grilled octopus, a dish so expertly prepared it was one of the best we had in Greece.
For a more relaxed setting, Omnia Restaurant offers Mediterranean classics with an international twist—think ceviche bursting with citrus notes and a decadent deconstructed Greek salad. The poolside champagne breakfast is another indulgence, where flaky pastries, homemade jams, and farm-fresh eggs arrive alongside chilled bubbles.

Ammoudi Bay, with its iconic red cliffs and traditional seafood tavernas, is a short stroll down a winding path, perfect for a leisurely waterfront dinner or a late-afternoon swim. The Castle of Oia, known for its sunset views, is nearby, though guests at Epitome arguably have a better vantage point right from their private terraces.
